Salty Rice Wine Condiment

Cooking sake has a higher salt content than the sake usually sold as beverage, and thus it is not suitable for drinking. When it is used for cooking, it retains the moisture of meat/fish and removes their odor as the alcohol evaporates.
It also gives the dishes added “umami” (savoury flavour) contained in the sake.

Mirin (味醂) is a type of rice wine similar to sake, but with a lower alcohol content and higher sugar content. The alcohol content is further lowered when the liquid is heated. The sugar content in mirin is a result of complex carbohydrate that forms naturally during the fermentation process.
