Salty Rice Wine Condiment

Cooking sake has a higher salt content than the sake usually sold as beverage, and thus it is not suitable for drinking. When it is used for cooking, it retains the moisture of meat/fish and removes their odor as the alcohol evaporates.
It also gives the dishes added “umami” (savoury flavour) contained in the sake.
